Fruit and Vegetable JuicesA European study has revealed that 100 percent fruit and vegetab
le juices are as effective as their whole fruit/vegetable counterparts in reducing risk factors related to certain diseases. The conclusion is the result of the study designed to question traditional thinking that 100 percent juices play a less significant role in reducing risk for both cancer and cardiovascular disease than whole fruits and vegetables.

Juices are comparable in their ability to reduce risk compared to2 their whole fruit/ vegetable counterparts, according to several researchers in the United Kingdom who conducted the literature review. The researchers analyzed a variety of studies that looked at risk reduction attributed to3 the effects of both fiber and antioxidants. As a result, they determined that the positive impact fruits and vegetables offer come not from just the fiber but also from antioxidants which are present in both juice and the whole fruits and vegetables.4

“When considering cancer and coronary heart diseases prevention, there is no evidence that pure fruit and vegetable juice sare less beneficial than whole fruit and vegetables,” the researchers said. The researchers added that the positioning of juices as being nutritionally inferior to6 whole fruits and vegetables in relationship to chronic disease development is “unjustified” and that policies, which suggest otherwise about fruit and vegetable juices, should be re-examined.

The researchers who authored the paper suggest that more studies in certain area are needed to bolster their findings. Although this independent review of the literature is not designed to focus on any particular 100 percent juice, it does go a long way7 in demonstrating that fruit and vegetable juices do play an important role in reducing the risk of various diseases, especially cancer and cardiovascular disease," said Sue Taylor. Her opinion is in agreement withs the Juice Products Association9 , a non-profit organization not associated with this research. She added that appropriate amounts of juices should be included in the diet of both children and adults, following guidelines established by leading health authorities. Taylor also points to a large epidemiological study, published in the September 2006 issue of the Journal of Medicine, which found that consumption of a variety of 100 percent fruit and vegetable juices was associated with a reduced risk for Alzheimer’s disease10.

In fact, that study found that individuals who drank three or more servings of fruit and vegetable juices per week had a 76 percent lower risk of developing Alzheimer’s disease than those who drank juice less than once per week. The study was published in the International Journal of Food Science and Nutrition TM (2006).

And all the work has been done for you: the slicing, the peeling, even the cooking. Canned fruits and vegetables leave you the(55) to be creative. And with the variety of fruits and vegetables available these days, you can serve different combinations, create new dishes, and(56) new tastes to old recipes. Canned foods are good as well. A United States Department of Agriculture and National Food Association co-sponsored study shows canned vegetables to be just as(57) as fresh or frozen. Because canned vegetables are processed within hours of(58)packed, they generally retain 70 to 90(59)of their nutrients.

Fruit and vegetable canning is as simple(60)when your grandmother "put up" tomatoes and other things from the garden. Fresh produce is taken from the field at just the right time, delivered to the cannery, checked, washed, sealed, and sterilized. All this generally happens in less(61) 24 hours to(62) the best quality and nutritional value without the need for any preservatives.

Use the liquids that vegetables are canned(63)as a substitute(64) water in recipes to get that last drop of good nutrition.

Irradiated Food

Irradiating (照射)fruits, vegetable, pork and chicken to kill insects and bacteria has been approved by the Food and Drug Administration over the past decade or so. Irradiation of other meats, such as beef and lamb, is being reviewed. Federal approval dose not require that industry adopt the process, and few food processors presently offer irradiated products.

Market studies have shown that many consumers are afraid that eating irradiated food may cause cancer, despite scientific studied that prove the safety of treated food. Some people argue that more severe government inspection, higher food-safety standards, and more careful food-preparation practices by consumers are all that is needed to ensure that food is safe. Consequently, companies cur rently see no need to spend millions of dollars outfitting(配备) processing plants with the equipment necessary for a process that very few shoppers are in favor of.

All supermarkets that sell irradiated food must label that food either directly on the packaging or in the case of bulk items like fruits and vegetables by placing a sign nearby. There is no requirement for the labeling of irradiated food served by chain restaurants or hospitals that buy directly from distributors, nor any regulations for products that contain irradiated ingredients.

Presently, the FDA allows food to be treated with types of radiation-gamma rays, high-energy electrons, and X-rays-and sets limits on doses(辐射量) depending on the type of food. The principle is that the does to be used for a certain type of food should not exceed the amount that is sufficient to kill most harmful insects and bacteria present in it. Different types of food, because of their different molecular(分子) compositions, may require different doses of radiation.

According to the passage, killing insets and bacteria present in food by irradiating ______.

A.has been completely approved by the FDA

B.is being reviewed by the FDA

C.is not completely approved by the U. S. government

D.has been widely adopted in the U. S.

FDA: Human, Animal Waste Threatens Produce

The biggest food safety risk for fresh fruits and vegetables as they are grown, picked or processed comes from human and animal waste, the US Food and Drug Administration (FDA) said Friday.

More than 9,000 Americans die each year from food-borne diseases and some scientists believe fresh produce is the biggest carrier of contamination.

The FDA issued a set of draft guidelines for US and foreign growers to carefully monitor worker hygiene, water quality, manure management and transportation.

This 34-page draft guidelines urged growers to give workers lessons on basic hygiene such as Using soap to wash their hands, covering wounds that could come into contact with produce, and using only clean toilets.

The FDA guidelines identified "the major source of contamination" for fresh produce as human or animal feces.

"We think just proper controls and proper attention to detail would make a big difference in food safety," said an FDA official. "It is our belief that these guidelines would not be very costly. "

But grower groups disagreed with the FDA's assessment. "Most food-borne disease outbreaks that happen further down the distribution line are due to contamination because people preparing food are not properly washing their hands," said Stacey Zawal, an official with United Fresh Fruit and Vegetable Association. "That is not necessarily true for growers and packers. "

Some US grower organizations have expressed concern that the agency is interfering with on- farm practices. 8 Others object to the FDA's proposal to have growers formally document the picking, handling and transportation of produce so that health officials could quickly recall foods if necessary.

Consumer groups criticized the FDA guidelines as of little use because they will not carry the force of law to But stricter regulations could evolve as researchers find new technology or methods to kill harmful bacteria or parasites, the FDA said.

The FDA recommendations are due to be made final by the FDA later this year for use by US and foreign growers. The matter of encouraging foreign growers to adopt the guidelines remains somewhat tricky but FDA officials say it is vital because of the huge amount of imported produce.

"Food-borne diseases" in this essay means those diseases

A.which people get by eating fruits and vegetables which have been polluted.

B.which people get by eating too many kinds of food.

C.which many kinds of fruit get when polluted by feces.

D.which fruit-growers get by their failure to keep themselves clean.

Increasingly, over the past ten years, people—especially young people—have become aware of
the need to change their eating habits, because much of the food they eat, particularly foods, is not good for the health. Consequently, there has been a growing interest in natural foods: foods which do not contain chemical additives and which have not been affected by chemical fertilizers, widely used in farming to- day.

Natural foods, for example, vegetables, fruits and grains which have been grown in soil that is rich in organic matter. In simple terms, this means that the soil has been nourished by unused vegetable matter, which provides it with essential vitamins and minerals. This in itself is a natural process compared with the use of chemicals and fertilizers, the main purpose of which is to increase the amount—but not the quality—of foods grown in commercial farming areas.

Natural foods also include animals which have been allowed to feed and move freely in healthy pastures. Compare this with what happens in the mass production of poultry: there are battery farms, for ex- ample, where thousands of chickens live crowded together in one building and are fed on food which is little better than rubbish. Chickens kept in this way are not only tasteless as food; they also produce eggs which lack important vitamins.

There are other aspects of healthy eating which are now receiving increasing attention from experts on diet. Take, for example, the question of sugar, this is actually a non-essential food! Although a natural alternative, such as honey, can be used to sweeten food if this is necessary, we can in fact do without it. It is not that sugar is harmful in itself. But it does seem to be an additive: the quantity we use has grown steadily over the last two centuries and in Britain today each person consumes an average of 200 pounds a year! Yet all it does is provide us with energy, in the form. of calories. There are no vitamins in it, no minerals and no fibre.

It is significant that nowadays fibre is considered to be an important part of a healthy diet. In white bread, for example, the fibre has been removed. But it is present in unrefined flour and of course in vegetable. It is interesting to note that in countries where the national diet contains large quantities of unrefined flour and vegetable, certain diseases are comparatively rare. Hence the emphasis placed on the eating of wholemeal bread and more vegetables by modern experts on healthy eating.

Recently, some people are interested in natural foods because ______.

A.these foods are fresh and sweet

B.they want to change their eating habits

C.these foods do not contain chemical additives and have not been affected by chemical fertilizers

D.they don't like the processed foods

Cancer develops over a long time, which means that you have years——typically decades——in w
hich to hinder or promote it. Researchers are finding that what you eat may interfere with cancer growth at various stages. For example, certain foods can block the chemicals that initate cancer. Antioxidants(抗氧化剂), found in some vitamins and minerals, can snuff out oxygen free radicls (氧自由基), substances that are thought to make cells more susceptible to cancer, and they can even repair some of the cellular damage that has been done. And some food—wheat bran(麦,糠) in particular—has been shown to shrink precancerous(癌症前期的) cells.

A recent review of 17 studies from 17 nations reveals that people who eat the most fruits and vegetables have about half the cancer raters of those who eat the least. In fact, some research suggests that frequent consumption of fruits and vegetables can cut the risk of lung cancer even in smokers.

One of the most studied antioxidants in vegetables and fruits thought to protect against cancer is beta-carotene(β胡萝卜素), concentrated in deep green, yellow and orange vegetables such as carrots, sweet potatoes and spinach.

Research also shows that beta-carotene can change in the body to retinoic acid (维生素A酸), a substance used in clinical trials to treat certain cancers.

Here are some of the foods that contain cancer-fighting chemicals.

Tomatoes. One of the compounds in tomatoes that is thought to reduce the risk of cancer is lycopene(蕃茄素), the pigment (色素) that makes tomatoes red. Lycopene, an antioxidant that is also found in watermelons and apricots, quenches certain cancer-triggering oxygen free fadicals. Healthy people with the most blood lycopene.

Green Vegetables. A recent Italian study showed that dark-green leafy vegetables lower the risk of many cancer. Spinach, broccoli, kale and dark-green lettuces are chock-full of antioxidants, including beta-carotene, folate(叶酸) and lutein(叶黄素).A good rule of thumb(单凭经验的做法) : the darker the vegetable, the more antioxidants within.

Pungent preventives(刺激性的预防物). A whole host of chemicals thought to have cancer-inhibiting properties have been identified in allium vegetables, which include garlic, onions and scallions(大葱). Animal studies show that many of these chemicals block carcinogens that have been linked to colon, stomach, lung and liver cancer. A study at Pennsylvania State University found that feeding rats various garlic extracts and preparations(配制好的食物) reduced mammary tumors by as much as 71 percent. In humans, studies suggest that those who eat more onions and garlic are less prone to gastrointestinal cancer.

Research suggests that garlic compounds may even interfere with cancer progression. A recent German study found that ajoene, a garlic compound, is toxic to malignant cells. Garlic may also antagonize existing cancer by boosting(促进) immune functions, according to researchers at Loma Linda University School of Medicine. Their study, done on mice, found that garlic's sulfur compounds increased the activity of macrophages and T-lymphocytes(淋巴细胞), two of the components of the immune system that destroy tumor ceils.

Recent research indicated that what people eat may help to significantly reduce their risk of developing cancer.

Passage One

At Benjamin N. Cardozo High School in Queens, he was known as Matthew Kaye, an earnest social studies teacher shepherding his ninth-and tenth-grade students across the panorama of global history. But out of school-on the professional wrestling circuit- he was Matt Striker, a muscleman known for a move called the lung blower.

His double life may have body-slammed ins teaching career.

According to city investigators, Mr. Kaye, 31, falsely called in sick for 11 days in December and February when he was actually on the wrestling tour. Faced with disciplinary action, Mr. Kaye resigned in April, but yesterday be said that he hoped to get ins job back

"There are people out there who touch children inappropriately who are still allowed to work, "Mr. Kaye said in a telephone interview. "The only thing I did was I put in sick days instead of personal days, because I didn't know them was a difference."

But Richard J. Condon, the special commissioner of investigation for the city schools, said it was not that simple. Teachers get 10 sick days a year and only 3 of those can he used for personal business.

Investigators from Mr. Condon's office said a woman who identified herself as Mr. Kaye's mother called Cardozo in December and said that he was out because of a family emergency. Mr. Kaye later told an assistant principal at the school flat his sister was ill.

Then Mr. Kaye was absent in February, when wrestling Web sites said that he appeared on die television show "Smack Down!" in a match against Kurt Angle.

Investigators sought to interview Mr. Kaye, but his lawyer canceled the session and Mr. Kaye resigned.

Mr. Kaye eventually provided two notes from doctors for his absences. But investigators questioned their validity and urged the State Health Department's Office of Professional Medical Conduct to investigate and take action.

Passage Two

The evidence of dietary protection against cancer is strongest and most consistent for diets high in vegetables and fruits, according to an earlier report by the World Cancer Research Fund (WCRF).

The WCRF panel of experts concluded that the daily consumption of 400 grains or more of a variety of vegetables and fruits could, irrespective of other diet and lifestyle. patterns, decrease overall cancer incidence by at least 20 per cent, according to the Asia Food Information Centre.

There is convincing evidence that diets high in vegetables and fruits protect against cancers of the mouth and pharynx, oesophagus, lung, stomach, rectum, larynx, pancreas, breast and bladder. High dietary fiber is also associated with lower risk of some cancers, especially bowel cancer.

The recommended daily intake of dietary fiber is 25-30 grams for a healthy adult. This can only be achieved by incorporating high fiber foods such as whole grains, vegetables, fruit, nuts and seeds into eating patterns every day and/or using a bran supplement.

Adequate fruit and vegetable intake has a protective effect, helping ward off chronic diseases while helping to elevate resistance to infections disease and reduce nutritional deficiencies. Fruit and vegetables actively promote health by providing bodies with essential vitamins, nutrients, fiber and a myriad of phytochemicals (植物化学物质) which acts as antioxidants (抗氧化剂 in the body. Antioxidants neutralize the free radicals that accelerate the process of cell decay and increase the chances of cells becoming cancerous.

Four hundred grams of fruits and vegetables per person per day (excluding potatoes and other starchy tubers) for the prevention of chronic diseases translates to approximately "5-a-day" that is, eating five or more servings of fruit and vegetables every day.
